Easter Cupcakes

These cute Easter cupcakes are super easy to make and most importantly they taste great!

Ingredients:

250g Self Raising Flour

250g Caster Sugar

250g Unsalted Butter/Margarine

4 Large Eggs (250g)

Chocolate (to melt)

A packet of Mini Eggs

Pack of Cadbury Flake

 

 

1) Start by preheating the oven to 180c˚. In a mixing bowl mix the flour and caster sugar, add the eggs and the butter and mix well until the mixture is smooth. We suggest cutting the butter into smaller squares so that it’s easier to mix.

2) Place your cupcake cases into your muffin tray and distribute the mixture evenly into the cases. Cook for around 15-20 minutes.

3) Before decorating leave the cupcakes to cool completely. Once cool using a teaspoon cut the top of the cupcake off leaving a small indent, this is where the melted chocolate will go.

4) Break up the flakes into a bowl, but try not to break them up too much as you still want the flake looking texture.

5) Melt your chocolate, this can be done on the hob, all you have to do is melt the chocolate in a bowl that is over some hot water or you can melt it in the microwave.

6) With a spoon add the melted chocolate into the top of the cupcake, sprinkle the flake over the melted chocolate and then add the mini eggs on top.

7) Once the chocolate is set and the eggs are sturdy… enjoy!
